KASHUBIAN HERRING BITES (“KASZUBSKIE KĄSKI”) WITH HOT PINEAPPLE AND TORTILLA CRISPS

INGREDIENTS:
  • 150 g Kashubian Herring Bites (“Kaszubskie kąski”)
  • tinned pineapple in pieces
  • 20 ml olive oil
  • one thinly cut chilli pepper
  • cheese tortilla crisps
  • sliced soft cheddar cheese
COOKING INSTRUCTIONS:

1. Preheat the oven to 180° C degrees.
2. Strain the pineapple, keep the juice. Put the fruit into a frying pan with some olive oil, add the chilli pepper, stir and pour some pineapple juice. Simmer for a few minutes.
3. Put crisps onto an ovenproof dish, add the herring, top with the hot pineapple salsa.
4. Top with cheddar slices and put into a preheat oven. Bake for 5 min.
