PREPARATION:

1. Drain the herrings in a Drainer and place them into a bowl. Cut them in Stripes und put them into to the fridge.
2. Cut the tomatoes in thin halfmoons, paprika in stripes, red onion in flakes. Spring onion and pepperoni cut in small pieces. Peel the avocado and cut it in thicker slices. Pour the lemon juice over them and season them with salt to taste. Add the herring pieces and mix well. Cut the Chinese cabbage in thin flakes (preferably the interior part which is crispy).
3. Blend the natural yoghurt with lemon and season with salt to taste.
4. Toast the tortilla in a Teflon coated pan with a trace oil-amount until brown.
5. Spread the tortilla with yoghurt, put the Chinese cabbage and then put our spicy salsa with herring on the top of it. Roll up everything in a quite strong manner.
6. Cut the roll in 4/5 pieces and stick a toothpick through each of them to avoid unrolling.

SPICY TORTILLA MIT HERRING PIECES À LA MATJES,
JULIENNE CHINESE CABBAGE. TOMATO SALSA, PAPRIKA MIX AND AVOCADO

INGREDIENTS:
  • 200 g Herrings à la Matjes
  • 4 Tortilla 25 cm.
  • 150 g tomatoes
  • 150 g Three Colours Paprika (red, yellow and green)
  • 100 g red onion
  • 1 bunch spring onion
  • 1 lemon zest
  • 1 avocado
  • 1 fresh pepperoni
  • 300 g Chinese cabbage
  • 10 g fresh mint
  • 150 g natural yoghurt
  • lemon juice for the yoghurt - ½ lemon
  • salt to season to taste
  • 50 ml oil
